I would say Gordon has more reasoning. There is multiple ways to improve, Simon ignores the fact that no matter who you are, you could improve.

Also Simon is way meaner honestly. Gordon said himself in Hell's Kitchen he's just acting and trying to push them to be better. But when you are the greatest chef in the world and see someone burn something how do you think you'll feel?
