Well, people are born either male, female, or intersex. However, it's their choice if they want to identify as anything else. I don't know about thousands, but there's an entire spectrum of other genders.
Well, scientifically 2. I count being trans as one of the two genders for identifying as their biological genders. The ones I know of: Male (or trans and identifies as male) Female (or trans and identifies as female) See More Queer (doesn't identify as either, but has a gender) Agender (doesn't technically have a gender)
However, those are the only ones. I don't believe there's more than that.
