Chocolate chip muffinsIngredients list:
1/3 lb butter, softened
1/2 tsp vanilla extract
4 medium eggs
1 c. sugar
1 tbsp baking powder
1/2 tsp salt
1/4 c. milk
2 1/2 c. flour
¾ lb chocolate chips
Instructions:
1. Preheat oven to 400 degrees F. Butter muffin pan and set aside.
2. In large bowl combine butter and vanilla using a hand mixer until light and fluffy.
3. Slowly beat in eggs, until combined. Slowly add sugar, until completely combined.
4. In small bowl combine baking powder, salt, milk, and flour. Slowly mix into butter until just combined, but still lumpy. Add chocolate chips and combine.
5. Pour mixture into muffin pans, filling each cup two-thirds full.
6. Bake for 25 minutes or until muffins turn golden brown, and a toothpick inserted into center of muffin comes out clean.
Banana Muffins
ingredients list:
1/2 cup butter, room temperature.
1 cup granulated sugar.
2 large eggs.
2 large bananas, ripe, mashed.
1 teaspoon vanilla extract.
2 cups all-purpose flour.
1 teaspoon salt.
1 teaspoon baking powder.
1/2 teaspoon baking soda.
1/2 cup chopped pecans or walnuts.
Instructions:
Grease 12 muffin cups or line with paper muffin liners.
Cream butter and sugar with an electric hand-held mixer until light and fluffy.
Beat in eggs, one at a time, beating after each addition.
Add bananas and vanilla and beat until smooth.
Mix together the flour, salt, baking powder, and baking soda.
Stir flour mixture into butter mixture, alternating with the sour milk or buttermilk.
Stir until dry ingredients are moistened then gently stir in chopped nuts.
Spoon banana muffin batter into prepared muffin cups or liners.
Bake at 400°F for about 15-18 minutes, or until tops are lightly browned.
Cool muffins by turning them out onto rack to cool longer.
Mint chocolate chip Muffins
Ingredients:

1/4 cup cocoa powder
3/4 cup sugar
1/4 teaspoon cinnamon
1 egg
1/4 cup corn oil
2/3 cup milk
1 teaspoon mint extract
1 cup mini chocolate chip
Directions:
1.
Preheat oven to 375 degrees.

In large bowl, sift together flour, baking powder and salt. Stir in cocoa, sugar and cinnamon.
3.
In medium bowl lightly beat the egg. Stir in the corn oil, milk and mint extract.
4.
Add the egg mixture to the flour mixture and stir in the chocolate chips. Stir just until the dry ingredients are moistened.
5.
Fill greased muffin tins.
6.
Bake for 18 minutes or until a tester comes out clean.
