Yield: 12 cupcakes
Ingredients
For the cupcakes
1 cup all-purpose flour
1/4 cup and 2 tablespoons unsweetened cocoa powder
1 cup white sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon sea salt
1 eggs
1/2 cup cold, strong, brewed coffee
1/2 cup buttermilk
1/4 cup vegetable oil
For the Frosting
1 8 oz package cream cheese
1 stick unsalted butter softened
3-4 cups powdered sugar
Instructions
For the cupcakes
1. Preheat oven to 375 degrees and line cupcakes pan with liners
2. In a large bowl,stir the flour, cocoa powder, sugar, baking soda, baking powder and salt together. Make a well in the center and pour in the eggs, coffee, buttermilk and oil. Stir just until blended. . Spoon the batter into the prepared cups.
3. Bake in the preheated oven until the tops spring back when lightly pressed, 20 to 25 minutes.
4. Let cool on a wire rack.
For the Frosting
5. In a bowl of an electric mixing bowl using paddle attachment, mix together the cream cheese and butter until smooth.
6. Add powdered sugar 1 cup at a time mixing well between each addition until the desired consistency is achieved.
